Winter is creeping up, the days are getting shorter and darker. Fires are being lit and we’re starting to crave those warm and comforting foods. Sitting down to a bowl of homemade pasta with freshly made pasta sauce on a cold night, what could be better? Well, what about if you were also getting the benefits of super foods as well?

Making pasta is simple and fun. The dough only takes about 10 minutes, then it rests for 30 minutes before you roll it, cut it, and throw it into boiling water to cook for another 3-5 minutes (fresh pasta cooks MUCH faster than packaged pasta). Use the resting time to pull together the ingredients for the pasta sauce.
Adding kale and Maju's Spirulina Powder to the pasta dough will create an energizing, green boost to your delicious pasta, and the red sauce. Sprinkle a little shaved parmesan on top and this recipe makes a truly festive meal packed with vitamins and antioxidants.

 

The Basics:

Prep time: 15mins
Cooking time: 15mins
Makes: 4 servings

 

Ingredients:

For the pasta
3 cups kale leaves, hard stalks removed
2 cups flour, plus extra for rolling the pasta
½ tsp salt
3 large free-range eggs
2 Tbsp Maju's Spirulina Powder

 

For the sauce
2 Tbsp extra virgin olive oil
2 cloves garlic, crushed
2 cups tomato pasta or crushed canned tomatoes
1/2 cup fresh basil leaves, plus extra to serve salt and pepper to taste
Parmesan cheese to serve

 

Method:

Bring a medium saucepan of water to boil over a high heat and cook the kale for 3 minutes. Strain and leave to cool. Once cool, blend in a food processor until smooth. Set aside.
Whisk together the flour and salt in a medium mixing bowl. Create a deep well in the middle of the flour and add the eggs, kale and spirulina. Whisk with the fork to combine.
 
As you whisk the eggs, begin pulling in flour from the bottom of the bowl. Once enough flour has been added, it will start forming a dough. Don't worry if you haven't used all the flour, that will depend on the size of the eggs.
 
Turn the dough and any left over flour out onto a clean counter. Begin folding the soft dough on itself, flattening, and folding again. Once it has firmed up enough to knead, begin kneading with the heel of your hand.
 
At any stage you can incorporate more flour to stop the dough from sticking to you or the counter. Knead the dough until it is silky smooth and glossy (10 minutes).
 
Place the ball of dough inside a clean, dry mixing bowl, cover with plastic wrap, and rest for at least 30 minutes.
 
While the pasta rests, make the sauce.

Heat a large fry pan over medium heat, add the olive oil and garlic, and cook until fragrant.  Stir in the tomato and cook for 2 minutes. Reduce heat to low and add the basil and seasoning. Cook for a further 2 minutes then remove from heat and set aside.
 
Follow the rest of the steps in the Super Simple Pasta recipe to finish making the green pasta. Once you have cut all your green noodles, bring a large pot of salted water to a rolling boil and add the pasta. Cook for between 3-5 minutes then strain and return to the pot. Add the sauce and stir through.

To serve top the pasta with some sliced basil and a little shaved Parmesan.
